Veggie stuffed eggplants: the healthy and savory recipe
Stuff the eggplants this way and they'll be so delicious! The recipe is super simple
Ingredients:
- 2 eggplants
- Olive oil
- Dried oregano
- Salt
- Red pepper
- 250 g of champignon mushrooms
- Fresh parsley
- 1 garlic clove
- 200 g of cherry tomatoes
- 100 g of cheese
- 2 tbsp of breadcrumbs
Method:
1. Slice eggplants.
2. Brush with oil, oregano and salt.
3. Bake at 200° for 15 minutes.
4. Stir fry chili pepper and oil in a large pan, then add diced bell pepper.
5. Also add mushrooms and season with salt, chopped parsley and garlic.
6. Move this mixture into a ball and mix with cherry tomatoes cut in wedges, shredded cheese and breadcrumbs.
7. Stuff eggplants with this mixture.
8. Finish baking at 180° for another 15 minutes.
