I admit , I'm an Egyptian but I loooove the libyan cuisine. It's a rich cuisine with a huge variety of tasty and delicious recipes.
Mebatan or in other words , potatoes stuffed with minced meat with a blend of amazing spices.
Ingredients:
4 large potatoes
For the stuffing:
300 grams of minced meat
1 large grated onion
1 whole egg
2 egg yolks
1/2cup of finely chopped parsley
2 tbsp tomato paste
Bread crumbs, as a binder
1 tsp Cinnamon
1 tsp turmeric
1 tsp black pepper
1 tsp Salt
1 tsp Hararat spices which , if not available ,could be substituted with 1 tsp 7 spices
If you wish to prepare the Hararat spices, grinded and combine the following:
About 10 cloves
95 grams Galangal
120 gram ginger powder
100 grams Cinnamon powder
80 gram black pepper
18 gram coriander
Some Bay leaves
60 gram turmeric
1 nut meg
20 grams Cubeb pepper another name pipper cubeba
For the tomato sauce:
1 large tomato ,grated
1 tbsp tomato paste
Parsley
1 tsp 7 spices
1 tsp turmeric
1 tsp black pepper
Salt to taste
METHOD:
1-Combine all ingredients of the stuffing together , set aside
2 - Slice potato 1 to 1.5 cm thick
3-Cut through each slice , like a sandwich not cutting till the end
4-Stuff potatoes with minced meat
5-Dip the opened stuffed side of the potatoes in egg squash then flour
6-Deep fry the potatoes, remove when golden
7- In a cooking pot on medium heat, combine tomato sauce ingredients
8- In a baking dish , add all your potatoes next to each other brushing each one with the tomato sauce , baking in the oven until completely cooked , nearly for 20 minutes.
