 BEEF VEGETABLES SOUP BORSCHT

Beef vegetables soup Borscht!



INGREDIENTS :

1. Beef broth 10 cups 

2. 4 to 6 pieces of short ribs bone in boiled and tender, you can use Chuck roast cut into nice size pieces

3. Half a medium red or green cabbage sliced

2. 3 stalks of celery diced 

3. One large beet grated

4. Two bell peppers sliced

5. 3 to 4 medium carrots grated

6. One medium yellow onion sliced 

7. One bunch dill chopped

8. One bunch cilantro chopped

9. Half bunch parsley chopped

10. 2 bay leaves 

11. 6  garlic cloves chopped about 3 tablespoons 

12. 1 Tablespoon Salt 

13. 1 Tablespoon pepper to taste 

14. Turmeric two tablespoons 

15. Red paprika two to three tablespoons 

15. Two tablespoons tomato paste 

16. 1 teaspoon celery salt

17. 1 tablespoon soup mix like Vegeta 




METHOD:

You sauté the beets, carrots, celery, onion, carrots and bell peppers in oil until  they are very soft. Add all of your spices

Sauté a few minutes more. 

In a one gallon soup pot have broth and short ribs ready with bay leaves

Add the sautéed vegetables and then add the rest of the ingredients. Taste to make sure you have enough salt add more if needed. Off you like you can add some vegeta soup mix but not too much it is salty. 

I also add more garlic my family loves garlic. Cook the soup on medium heat for about an hour.
